75 % Sémillon, 20 % Sauvignon, 5 % Muscadelle.

Hand harvesting using the traditional methods of several runs, picking only well botritized grapes (noble rot)

Wine-making

Slow pressing, fermentation in barrels and vats.

 

Ageing

Ageing in barrels for 18 months and bottled in the third year in our cellars.

"Château du Vieux Moulin" is a well botrytized wine with honey, nuts and apricot taste. It ages well.
